Chicken Parmesan and Creamy Tomato Rice🌸
Ingredients🌸
🍅For the Chicken parmesan
1.5 kg of chicken breasts
3 eggs
1/4 cup of milk
1/4 tsp of black pepper
3 cups of italian style breadcrumbs
2 cups of flour
2 cups of marinara sauce
2 cups of shredded mozzarella cheese
1/4 cup of parmesan cheese
3 cups of frying oil
Salt to taste
🍅For the Rice
1 medium onion
1/4 cup of cooking oil
2 cups of long grain rice
3 cups of vegetable broth
1 cup of cooking cream
3 tbsp of tomato paste
1 tsp of black pepper
Salt to taste
Method🌸
-To make the chicken, cut the chicken breasts to make thinner pieces
-In a bowl, whisk the eggs with salt, pepper and the milk
-Dip each chicken piece in the egg wash first then into the flour then the egg wash again and finally in the breadcrumbs
-Fry the chicken in the oil on a medium to high heat until they turn golden brown
-Place the fried chicken on a baking sheet and put some marinara sauce on top of each piece
-Put both cheeses on top of each piece and Bake for about 15 minutes in a 350 degrees oven
-To make the rice, chop the onion and fry it in the oil on a high heat until it becomes golden, then add the tomato paste and cook for 2 minutes
-Add the cream and bring it to a boil then add the vegetable broth, the rice, salt and pepper and bring it to a boil before lowering the heat to the lowest
-Cover and let it cook for about 20-30 minutes
