Harira Soup 🌸
Harira is a Moroccan soup Moroccans usually prepare during Ramadan . It's full flavors and nutrients
It was a hit during my iftar last week and everybody loved it !
Ingredients🌸
1 bunch of fresh parsley
1 bunch of fresh Coriander
1 medium onion
1 bunch of celery sticks (without leaves)
6 cups of water
2 1/2 cups of tomato coulis
200 g of cubed beef
2 tbsp of unsalted butter
1/2 cup of green lentils
1 can of chickpeas
1 1/2 tsp of ginger powder
1 tsp of ground cinnamon
1/2 tsp of black pepper
Salt
1/2 cup of vermicelli
2 tbsp of flour
Method🌸
-In a blender, add the parsley, coriander, celery sticks and onion along with 2 cups of water and blend them very well
- Add the mixture to the soup pot and add more water , around 4 cups, along with the tomato coulis, butter and the spices, meat and lentils
-Bring to a boil and let cook until the meat are well done
-Dilute the flour in water until there are no more lumps and add to the soup , it gives it a velvety texture
-Add the chickpeas and the vermicelli and let cook for 15 minutes
Serve with dates 🌸
