Rooster White Biryani Rice🌸
Ingredients🌸
2 kg of a rooster meat with bones
4 cups of basmati rice
1/4 cup of olive oil
5 medium sized onions
1 garlic head
1 cup of plain yogurt
2 tsp of Black pepper
Salt to taste
1/2 cup of cooking oil
1 tbsp of saffron
2 Cinnamon sticks
3 Bay leaves
5 pieces of cardamom seeds
Method🌸
-Peel and chop 4 onions and the garlic head and fry in cooking oil until golden brown
-In another pan, boil 10 cups of water, add the olive oil and salt and the rice and cook until the rice is well done
-In a cooking pan, place the rooster along with 1 peeled onion, cinnamon sticks, bay leaves, cardamom seeds and cover with water.Cook for 1 hour or until it's cooked
-Using a blender, blend the onions and the garlic without their oil along with the yogurt then return to the pan and add the salt, pepper and 2 cups of the rooster broth and let it simmer
-shred the cooked rooster and add to the onion and garlic sauce
-In a small bowl, soak the saffron in a half a cup of water
-Strain the saffron and use the water only
-In a large pan, layer in this order : rice, onion sauce, saffron water (watch video)
-Cook on a low heat for 30 minutes 🌸Serve with minted yogurt
