Cheesy roasted red skin potatoes🌸
Ingredients 🌸
6 cups of red skin potatoes, cubed
1/2 cup of olive oil
1/4 cup of lemon juice
3 tbsp of white vinegar
1 1/2 cups mozzarella cheese,shredded
1 1/2 tsp of roasted garlic
1 1/2 tsp of oregano
1/2 tsp of black pepper
Salt
Method 🌸
preheat the oven to 350 degree -wash the potatoes really well, then add to a cooking pot and cover with water
- Bring to a boil and leave them until they are half cooked, around 5 minutes, this will cut the time in the oven
-Drain and transfer the potatoes to a baking dish
-Add the olive oil, lemon juice, vinegar, salt, pepper, roasted garlic and oregano and mix everything well
- Cover with aluminum foil and bake for around 1 hour or until the sauce is almost absorbed by the potatoes -uncover the dish and sprinkle the mozzarella cheese then roast until it's melted
