Shrimp Curry & White Rice 🌸
Ingredients🌸
1 kg of cooked shrimps
4 tbsp of butter
1 medium onion, chopped
1 garlic clove, minced
1/2 tsp of ground cumin
1/2 tsp of turmeric
1/2 tsp of curry powder
1 tsp of paprika
1 tsp of dried coriander
1/2 cup of strained tomatoes
500 ml of cooking cream
Salt to taste
🔸️For the Rice
1 cup of long grain Rice
2 cups of water
1 tbsp of butter
Salt to taste
Method🌸
-Over a medium-high heat and in a cooking pot, melt the butter then add the chopped onion then cook until the onion is pale and softened
-Add the garlic and cook for 1 minutes before adding the spices and salt and mixing it all together
-Add the strained tomatoes and bring to a small boil before adding the cooking cream
-Let it simmer for around 5 minutes before adding in the shrimps and cooking it on a low heat,covered for another 10 minutes, stir it every once in a while to prevent it from sticking
-For the rice, rinse the rice until the water is almost clear then add 2 cups of water, the butter and salt and bring to a boil then cover and lower the heat to the maximum and let it cook until the water is completely absorbed for around 25-30 minutes
