I've found The Holy Grail of raw kibbé. It's made by Georgina in a traditional stone mortar. The meat is pound until creamy. It's wonderful when she wraps a spoonful of the seasoned meat with a mint leaf and onion in marqouq bread with lots of olive oil. The stone keeps the meat cold so it stays fresh and delicious. And that's coming from a non-raw-kibbe-son-of-a-butcher guy!
I had to pinch myself with every bite to make sure I'm ENJOYING raw kibbé for real! .
