-2 tablespoon of olive oil
-2 garlic cloves chopped
-1 medium butternut squash (cut in cubes)
-1 yellow onion (cut in cubes)
-1 large carrot chopped
-2 celery stalks chopped
- 4 cups of vegetable stock
-1 cup of soy milk
-2 tablespoon of nutritional yeast (optional)
-salt and pepper
How to make it:
-in a large stockpot over medium heat, heat olive oil and saute garlic, onions and celery, until soft.About 5 minutes.Add the carrot, butternut squash and vegetable stock. Bring to a boil, then reduce the heat to low and simmer until all the vegetables are tender. (About 30 to 40 minutes)
-working in batches, transfer the soup to a blender and process until smooth. Return the soup to the pot. Then add soy milk,salt and pepper and nutritional yeast (it will give a cheesy effect/taste to the soup plus, it’s full of vitamins!) cook until desired temperature and consistency. And enjoy!
